"Sometimes I kind of feel like maybe chefs are the new cowboys . . . in the sense that we're in this free kind of job where we don't have corporate rules. We get away with a lot of stuff, man. Chefs are always so busy that we can be late, drunk, and tattooed, and we're still ready to go. Still ready to do our thing! But if your doctor shows up late, tattooed, and drunk, you're like, 'No thank you.' "
